Pork and fennel risotto - serves 2
Pork and fennel is one of the great combinations known to every sausage maker between Edgecliff and Leichhardt. Perhaps even beyond. A dead simple risotto that you can knock out for a quick and satisfying mid-week supper.
Arborio rice is laden with High Country pork mince, augmented fennel bulb and fennel seeds, and then laced withies Saya hand-churned butter and grated Parmesan for that mandatory rich texture. Shockingly good, to paraphrase one of the greats.
What's in the box
For the risotto...
What you'll have to do & how long it will take
Fry pork mince and set aside ~5 mins
Chop vegetables and saute in pot ~10 mins
Cook risotto and gradually ad stock ~20 mins
Stir through butter and Parmesan ~5mins
Total time if done concurrently: ~35 minutes
